6 7-8 inch flour tortillas
2 tbs cooking oil
1/2 cup My Brother Bobby's Tropical Black Bean Salsa
1 1/2 cups shredded Monterey Jack cheese (6oz)
3 oz of Smoked Salmon chopped
Brush one side of three of the tortillas with cooking oil and place them oil side down on a large baking sheet. Place one ounce of chopped smoked salmon on each tortilla. Sprinkle 1/2 cup cheese on top of the salmon. Top with remaining tortillas and brush with oil.
Grill quesadillas uncovered over medium heat for 3 to 4 minutes or till cheese begins to melt and tortillas start to brown, turning once.
Cut quesadillas into wedges and top with My Brother Bobby's Tropical Black Bean Salsa. Serve and enjoy!
